1 poached chicken breast (shredded)
3/4 cup orzo pasta
1/2 cucumber and red bell pepper cubed
1 tblspoon olive oil
3 tablespoons lemon juice
1/4 tsp. lemon zest
1 garlic clove chopped
1 tsp salt
1/2 tsp pepper
1/4 tsp honey
after cooking orzo, combine dressing and rest of ingredients. top with some chopped cilantro. its delicious!
